Recipes for Style – Brussels Sprouts with Bacon and Balsamic Vinegar

I never liked Brussels sprouts as a kid, but now they are one of my favorites, especially paired with other comfort foods. This is a great side dish, or you could toss the whole thing with a pound of pasta, sprinkle it with Parmesan cheese, and have a spectacular main course in no time!

Serves: 8

Ingredients:
2 tablespoons butter
¼ pound (4 strips) bacon, cut into ½-inch pieces
2 pounds Brussels sprouts, stalk ends removed, cut into halves, and blanched
¼ cup balsamic vinegar
Salt and pepper

Directions:

  1. In a large skillet, melt the butter over medium heat.
  2. Add the bacon and cook until crisp.
  3. Discard most of the fat, leaving 2 tablespoons in the pan.
  4. Add the Brussels sprouts to the reserved fat in the pan, pour in the balsamic vinegar, and sauté until the vinegar caramelizes on the sprouts.
  5. Season with salt and pepper to taste.
