Brussels Sprouts with Bacon and Balsamic Vinegar

I never liked Brussels sprouts as a kid, but now they are one of my favorites, especially paired with other comfort foods. This is a great side dish, or you could toss the whole thing with a pound of pasta, sprinkle it with Parmesan cheese, and have a spectacular main course in no time!
Serves: 8
Ingredients:
2 tablespoons butter
¼ pound (4 strips) bacon, cut into ½-inch pieces
2 pounds Brussels sprouts, stalk ends removed, cut into halves, and blanched
¼ cup balsamic vinegar
Salt and pepper
Directions:
- In a large skillet, melt the butter over medium heat.
- Add the bacon and cook until crisp.
- Discard most of the fat, leaving 2 tablespoons in the pan.
- Add the Brussels sprouts to the reserved fat in the pan, pour in the balsamic vinegar, and sauté until the vinegar caramelizes on the sprouts.
- Season with salt and pepper to taste.
