Caramelized Onion and Feta Cheese Puff Pastry Appetizer

It is so hard to stay on my healthy eating regime with all of the amazing parties and dinners that we find ourselves at over the holidays. Instead of torturing myself with turkey and steamed vegetables, I love to cook up flavorful appetizers that I enjoy. By making them in small portion sizes, it satisfies my craving without putting me over the caloric edge. This is one of my favorites!
Yellow onions are best for cooking this savory treat as they have a stronger flavor than the sweeter red or white onions.
Serves: 6
Ingredients:
2 tablespoons butter
2 pounds 4 ounces onions, finely sliced
2 tablespoons soft brown sugar
1 tablespoons balsamic vinegar
1 teaspoon sea salt
Freshly ground black pepper
13-ounce packet puff pastry
5 ½ ounces feta cheese, crumbled
Nutmeg
Directions:
- Place the butter and onions in a non-stick saucepan over low heat and cook for 15 minutes, stirring occasionally. Be careful not to let the butter burn. Add the sugar, balsamic vinegar, salt, and pepper.
- Cook the mixture for another 10 minutes, or until the onions are soft and caramelized. Remove from the heat and set aside to cool.
- Preheat the oven to 400°F.
- Roll the pastry sheet into a 14-inch square on a lightly floured surface. Cut into 36 (2 1/4-inch) squares. Press the squares into 36 (1 3/4-inch) mini muffin-pan cups.
- Bake for 10 minutes or until the pastries are golden brown.
- Fill the pastry cup with the crumbled feta cheese and top off with the caramelized onions.
- Place back in the oven for another 10 to 15 minutes, or until the pastry is puffed and golden brown.
- Sprinkle with nutmeg.
- Serve warm.
