Crab & Avocado Salad

I love crabs and I love avocados, so why not use them both to create a summer salad? Vegetarians can take out the crabmeat, and the salad will be just as good.
Ingredients:
1-2 tablespoons fresh lemon juice
1-2 tablespoons olive oil
1/2 lb mixed greens
1 ripe Hass avocado, peeled, pitted, and diced
1/2 pint cherry tomatoes, halved
1/2 lb lump crabmeat
1/2 cup chopped fresh chives
salt
freshly ground pepper
Directions:
- Whisk together lemon juice and olive oil to make dressing.
- Gently toss mixed greens, avocado, tomatoes, crabmeat, and chives.
- Add salt and pepper to taste.
- Serve and enjoy!
