Recipes for Style - Deviled Eggs

I got this recipe when my roommates and I cooked a big Thanksgiving dinner together for the first time. I don’t use the scallions or the salt and pepper – just mayo, eggs (I try to get the largest and freshest ones from the farmers’ market), and curry powder (to add a little zing).

Yield: 8 servings

Ingredients:
8 large hard-boiled eggs
1/3 cup mayonnaise
2 tablespoons minced scallions
1 teaspoon curry powder
Salt
Freshly ground black pepper

Directions:

  1. Peel the eggs and cut them lengthwise in half.
  2. Remove the yolks and place in a small bowl.
  3. Mash the yolks until smooth and add the mayonnaise.
  4. Mix until a smooth paste forms.
  5. Mix in the scallions, curry powder, and salt and pepper to taste.
  6. Spoon the mixture into the egg halves, or pipe using a pastry bag and star tip.
  7. Cover and refrigerate for up to 8 hours before serving.
